Sometimes Brownies are a great idea. Especially this recipe for a few reasons, one you only need one bowl, two you need few essential pantry ingredients, three it is vegan and no eggs or dairy is needed.
I had two zucchini and an idea to make dinner with it, then a brilliant idea popped into my mind and I baked this delicious recipe. So pictures are not the best but the results are amazing.
Ingredient
1 cup of vegetable oil ( I used olive oil extra light)
1 cup of brown sugar
1 tbsp. Vanilla extract
2 cups of flour
3/4 cup of cocoa powder
1 1/2 tbsp of baking soda
1 tsp of salt
1 whole Zucchini shredded (don't squeeze the liquid) we need that liquid to moist the cake
1/2 cup of chocolate chips
Instructions
Preheat the oven to 350 and prepare a pan with baking spray.
In a large bowl add the oil, sugar and vanilla extract, combine well.
I didn't use any electric equipment.
Then incorporate the dry ingredients, flour, cocoa powder, baking soda, salt.
Mix all ingredients its going to look very dry but that's a good thing. Then add the shredded zucchini with any liquid and the chocolate chips. Incorporate with a spatula. Let it sit for at least 5 minutes to allowed the dough to get more creamy.
Then bake for at least 35 mins. Then wait till cool down enough to cut the brownie in pieces.
I couldn't wait so I eat it warm and I skipped dinner.
